The necessary time, the extreme care
Making an excellent beer is a complex task that requires attention to numerous details in all phases of the production process. For Birra VIOLA, we do not compromise on any stage of the process. From carefully selecting the best ingredients to choosing the brewery based on water quality, we treat every component with the utmost care.
The process begins with barley malt, which is transformed by a malthouse (the conversion of raw grains into barley malt) and subsequently stored in modern silos with the advantage of putting less stress on the individual grains, which then face the first passage in a latest generation mill called “wet”. In fact, before grinding, the mill slightly wets the malt and, thanks to an initial soft pressing, keeps the skins intact which will then be used when the must passes into the filter vat.
This is followed by the crucial boiling phase, during which specific hops are added to give the characteristic bitter taste and define the flavor profile. After boiling, the wort passes through the whirlpool to separate the hop residues and is cooled through a coil containing cold water. This meticulous commitment and respect for the necessary times contribute to the creation of the beer that will be bottled.
